YourFIT Peanut Butter & Jelly Parfait

Ingredients

  • 6oz Fage Total 0% Yogurt
  • Tbsp PB2 powdered peanut butter
  • Two tbsp Rolled Oats
  • 1/2 c Fresh Berries
  • 1/8 c Raw Peanuts  ( You can use walnuts as well)
  • 1/4 tsp Pure Vanilla
  • Tbsp Coconut Sugar
  • Truvia or Stevia optional

Directions

  1. In non stick pan toast oats, nuts and coconut sugar on midium heat. Stir non stop and toast for about 2-3  min. You want the mixture to be crunchy but not burned.
  2. In a small bowl combine yogurt, vanilla, BP2 and stevia.
  3. Layer your yogurt mixture with berries.
  4. Top your parfait with toasted oats.
  5. Enjoy!

Make few for your upcoming busy week and grab on the go.  I put mine in a glass tupperware and top it with oats before I am ready to eat.  I like my oats crunchy.
