YourFIT Peanut Butter & Jelly Parfait
- 6oz Fage Total 0% Yogurt
- Tbsp PB2 powdered peanut butter
- Two tbsp Rolled Oats
- 1/2 c Fresh Berries
- 1/8 c Raw Peanuts ( You can use walnuts as well)
- 1/4 tsp Pure Vanilla
- Tbsp Coconut Sugar
- Truvia or Stevia optional
- In non stick pan toast oats, nuts and coconut sugar on midium heat. Stir non stop and toast for about 2-3 min. You want the mixture to be crunchy but not burned.
- In a small bowl combine yogurt, vanilla, BP2 and stevia.
- Layer your yogurt mixture with berries.
- Top your parfait with toasted oats.
Make few for your upcoming busy week and grab on the go. I put mine in a glass tupperware and top it with oats before I am ready to eat. I like my oats crunchy.
