Fit Oatmeal Cookie Protein Granola

Ingredients

 

  • 2 c old-fashioned rolled oats
  • 1  c walnuts
  • 1/2 c cashews (optional)
  • 1/2 c dried cranberries
  • 1 scoop of vanilla protein powder (I love Isagenix Creamy French Vanilla)
  • 4 tbsp coconut oil
  • ½ c apple sauce (I like unsweetened but my husband likes apple peach souce)
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 2 packets no calorie sweetener (optional)

 

Instructions

 

  1. Preheat oven to 325F. Line large baking sheet with parchment paper.
  2. Place oats, nuts and berries in a large bowl.
  3. Place apple sauce, 1 scoop of protein powder, Truvia, cinnamon and coconut oil in a small saucepan.
  4. Place saucepan on medium heat and whisk all the ingredients till smooth, thick and creamy. When your mixture begins to bubble add vanilla extract.
  5. Pour mixture over oats.  Then coat and spread the oats evenly on the baking sheet.
  6. Bake in preheated oven, stirring a few times until granola is dry (about 30 min).
  7. Remove granola from the oven,  let it cool and serve with milk of your choice or greek yogurt.

 

 

Fit Chocolate Coconut Protein Granola

Ingredients

 

  • 2 c old-fashioned rolled oats
  • ½ c almonds
  • ½ c walnuts
  • ¼ c  pumpkin seeds
  • 1/2 c dried cranberries
  • ¼ c dried goji berries
  • 1 scoop of chocolate protein powder (I love Isagenix Creamy Dutch Chocolate)
  • 4 tbsp coconut oil
  • ½ c apple sauce (I like unsweetened)
  • 1 tsp pure vanilla extract
  • ½ c coconut flakes
  • ¼ c freeze-dried pomegranate seeds (optional)
  • 2 packets no calorie sweetener (optional)
